Ingredients:
4 boneless chicken breasts, pounded thin
1 cup flour
1 tbsp kosher salt
1 tsp freshly cracked black pepper
1/2 cup chicken broth
2 tbsp balsamic vinegar
2 minced garlic cloves
1 bay leaf
1 sprig fresh thyme
Instructions:
1. Stir together flour, salt and pepper on a plate. Coat chicken with flour. Shake off excess. Cook chicken in a large skillet until really well browned (approx 4 minutes each side). Add garlic and cook one minute.
2. Add remaining ingredients and simmer with lid on for 10 minutes.
3. Remove chicken and continue to reduce sauce over medium high heat for a couple of minutes.
4. Strain sauce and serve over chicken.
